Mokador Quality

01. Selection

Mokador chooses only the finest selections of green coffee, grown in the best areas for cultivation and harvest.
The in-house tasting panel evaluates and approves every lot of green coffee before it is purchased and shipped. The master roaster checks the green coffee on its arrival at the site, and submits it to a further phase of cleaning. The coffee then rests in dedicated silos for each origin until it is roasted.

02. Roasting

Mokador uses separate roasting processes to bring out the taste of each individual origin of green coffee. The master roaster has created the optimal cooking curve for each coffee, with the goal of reaching the point where the balance of body, aroma and flavour is perfect for every bean. At the end of the roasting process Mokador uses natural air cooling to protect the flavour of the coffee over time. Transfer to the destoner after roasting and cooling allows us to eliminate all residues that will affect the purity of the coffee.

03. Blending

The recipes for our coffees are the fruit of our history, our passion, and careful attention to the tastes and suggestions of our customers. Only after every origin of green coffee has been roasted does the master roaster create the blends for the perfect balance of flavour and aroma, using varieties of Arabica, which give the coffee softness, sweetness and fragrance, and Robusta, which give an espresso structure and body.

04. Ageing

After being cooled and blended, the coffee begins its ageing process, and it is here that the coffee acquires more body, flavour and aroma. Every blend needs a different amount of resting time, which can reach up to two weeks for our most exclusive products.

05. Packaging

Mokador uses state-of-the-art industry 4.0 packaging lines to guarantee optimal production efficiency and perfect packaging of the products, guaranteeing correct storage and the preservation of the excellent sensory qualities of the product destined for the consumer.
Quality control performs numerous tests throughout the production chain to guarantee respect for the company's certified quality standards.
The packaging materials used are controlled and selected to guarantee their suitability for preserving the finished product, in compliance with all regulations to protect consumers with regard to food safety.

06. Transparency

Confirming our commitment to continuously improving the efficiency of our products and services, but also our care and responsibility for the environment, Mokador has received the following voluntary certifications from the prestigious institution Bureau Veritas:

Bureau Veritas certifies the quality management system throughout the production chain, from purchasing the green coffee, to roasting, to the sale of the product.
